of a massive three-year study into global agriculture

and declared that meat production is destroying our planet

and jeopardizing global health.

[This requires] nothing less than a new global agricultural revolution.”

As somebody who’s spent the last two decades

advocating a shift away from industrial meat production,

I wanted to believe that

this clarion call was going to make a difference.

The thing is I’ve seen this sort of thing

again and again and again for decades.

that threaten to render antibiotics obsolete

Besides,convincing the world to eat less meat hasn’t worked.

have been begging the public to eat less meat.

And yet, per capita meat consumption

is as high as it’s been in recorded history.

The average North American last year ate more than 200 pounds of meat.

And I didn’t eat any.

Which means somebody out there ate 400 pounds of meat.

依照这个速度来看
On our current trajectory,
到2050年我们将需要多生产
we’re going to need to be producing 70

to 100 percent more meat by 2050.

This requires a global solution.

What we need to do

is we need to produce the meat that people love,

but we need to produce it in a whole new way.

I’ve got a couple of ideas.
方案一 我们从种植的植物中获取肉类
Idea number one: let’s grow meat from plants.
而不是种植物 再将它们喂给动物
Instead of growing plants,feeding them to animals,
这一低效率的做法 我们来种植物
and all of that inefficiency, let’s grow those plants,
把植物做成肉的样子
let’s biomimic meat with them,
我们用植物来制造肉类
let’s make plant-based meat.
方案二 要生产真正的动物肉制品
Idea number two: for actual animal meat,
那就让我们直接从细胞制作
let’s grow it directly from cells.
让我们直接培养细胞
Instead of growing live animals,
而非喂养活的动物
let’s grow the cells directly.
将鸡养到待宰的重量需花六周时间
It takes six weeks to grow a chicken to slaughter weight.
但直接培养细胞
Grow the cells directly,
你在六天内就能得到同等重量的肉类
you can get that same growth in six days.
这就是大规模生产实景
This is what that looks like at scale.
这是你们邻近友好的肉类“啤酒厂”
It’s your friendly neighborhood meatbrewery.

I want to make two points about this.

The first one is, we believe we can do it.

In recent years, some companies have been producing meat from plants
消费者无法分辨出真假肉的食品了
that consumers cannot distinguish from actual animal meat,
现在还有一些公司
and there are now dozens of companies
在用培养细胞的方式生产肉类
growing actual animal meet directly from cells.
这种用植物和细胞生产的肉
This plant-based and cell-based meet
能给消费者带来与普通肉类相一致的感官体验
gives consumers everything that they love about meat —
像口味 口感之类均相似
the taste, the texture and so on,
且不会用到抗生素
but with no need for antibiotics
对气候只会有细微的不利影响
and with a fraction of the adverse impact on the climate.
且因为这两种技术要高效的多
And because these two technologiesare so much more efficient,
上述产品在大规模生产后也会更便宜
at production scale these products will be cheaper.
但还有一个小问题 这并非说起来那么容易
But one quick point about that, it’s not going to be easy.
这些用植物生产肉类的公司
These plant-based companies
已经在他们的汉堡上投入了部分资金
have spent small fortunes on their burgers,
而用细胞制作的肉类则还未向大众宣传
and cell-based meat has not yet been commercialized at all.
所以我们需要志同道合的伙伴
So we’re going to need all hands on deck
来和我们一起将理想变为现实
to make these the global meat industry.
首先 我们依然需要现在的肉制品产业
For starters, we need the present meat industry.
我们并不想干扰肉制品产业
We don’t want to disrupt the meat industry,
我们想要变革
we want to transform it.
我们需要他们的规模经济
We need their economies of scale,
他们的全球供应链 市场专业技术
their global supply chain, their marketing expertise
和庞大的消费群体
and their massive consumer base.
我们还需要政府
We also need governments.
政府每年都会在科学研究和以全球健康与
Governments spend tens of billions of dollars every single year

on research and development focused on global health and the environment.

They should be putting some of thatmoney

into optimizing and perfecting

the production of plant-based and cell-based meat.

Look, tens of thousands of peopledied

Meat production is exacerbating these emergencies on a global scale.

unless we give consumers alternatives

that cost the same or less and that taste the same or better.

We have the solution.

Let’s make meat from plants.

Let’s grow it directly from cells.

It’s past time that we mobilize theresources that are necessary

to create the next global agricultural revolution.
