[Kombu]and the ingredients are actually very, very simple.
[柴鱼片] 只需要盐 水 面粉就可以了

我要做面条
I’m going to make the noodles.
把面粉筛一筛
Sift the flour in a bowl.
盐溶在水里后拌进面粉里
Dissolve salt in water and mix it into the flour.
揉捏面粉至面团
Knead the flour and make it into dough.
面团放进袋子里 然后踩上去(对你没看错 踩上去!)
Put the dough in a bag and step on it.
踩的次数越多 面的质感就越棒
The more you do this, the better the texture will be.
面踩扁到一定程度就拿出来
Once the dough becomes somewhat flat,
折叠一下 重复几次这个操作
fold it and repeat this process a few more times.
一些乌冬店为了让质感更好
Some udon stores do this step for more
甚至会踩一小时以上噢
than an hour to get a better texture. Oh,

尼嚎呀接着把面团放置一小时左右醒面
rest the dough for about an hour.
在醒面的同时 让我们开始准备炸天妇罗用的食材
While resting the dough, let’s prepare other ingredients for tempura.
胡萝卜切丝
Shred the carrot.
切掉茄子的头部然后做成扇形
Cut off the tip of eggplants and make it into a fan shape.
用盐擦去秋葵表面的毛
Rub off the hair of okra with salt
再用牙签扎几个洞 这样等会油炸的时候就不会爆炸
and make some holes so theydon’t explode while deep-frying.
切掉虾尾部的尖并挤出水分
Cut off the tip of the tail and squeeze the liquid out of it. Then,
接下来切断虾的筋
cut the muscle strings and press
然后压一下 这样在油炸的时候虾就不会卷起来
them so the shrimp doesn’t curl while deep-frying. Now,
醒完面后像这样把面团压平
let’s flatten the dough like this.
确保面团都沾上面粉
Make sure to coat it with flour. Then,

fold it and cut it into noodles. Or,

you can just use pasta machine if you have one.
现在开始做汤汁
Let’s make the soup.
锅中放入小鱼干
Add dried sardines, kombu, and water in a pot.

Right before it starts boiling, take them out.
接着加入厚柴鱼片煮几分钟
Add thick bonito flakes and boil it for a few minutes.
关掉火再加一些薄柴鱼片
Turn off the burner and add thin bonito flakes
放置大概5分钟到柴鱼片都沉浸下去
and wait for about 5 minutes until they all sink.
用纸巾过滤汤汁
Filter the soup with a paper towel.
加入一勺酱油和少量盐
Add a teaspoon of soy sauce and pinch of salt.
嫌麻烦你也可以买现成的汤粉直接加水里煮开
You can also just buy soup powder and mix with boiling water as well. Now,
现在把水加到天妇罗粉里做成面糊
add water to the tempura flour and make batter.
先在食材外沾上一层面粉再过面糊
Coat the ingredients with flour first and then batter.
油温应该要在180℃
Oil temperature should be 180°C.
面煮10分钟左右
Boil the noodle for about 10 minutes.
把所有东西摆在碗里就完成啦
Place everything in a bowl to finish.
