XO熏鸭扇贝

Smoked Duck Scallops with XO Sauce - XO酱熏鸭扇贝

6颗大扇贝
6 large scallops
芦笋 120g
120g medium size asparagus
切除芦笋底部
remove woody stem from asparagus
将一块烟熏鸭胸肉切成12片
cut 12 slice from 1 smoked duck breast
两片烟熏鸭肉包裹扇贝
wrap each scallop with 2 slices of smoked duck
牙签固定
secure it with a toothpick
剩下的扇贝也如此处理
repeat for the rest of the scallops
预热的平底锅里倒入2汤匙油
heat 2 tbsp oil in a wok pan
放入芦笋
add asparagus
少许盐和胡椒粉调味
season with pinch of salt and pepper
煸炒2-3分钟
stir fry for 2-3 mins
取出放置一旁
remove and set aside
放入扇贝卷
add scallops to wok
黑胡椒调味
season with black pepper
扇贝两面煎至金黄 2-3分钟(时间视扇贝大小而定)
brown the scallops on each sidefor 2-3 mins(depending on the size)
取出放置一旁
remove and set aside
把芦笋放入盘中
lay the asparagus on a plate
扇贝卷放置芦笋上方
place the cooked scallops on top
倒入5汤匙清水
add 5 tbsp water to a clean wok
倒入1汤匙李锦记酱油
1 tbsp Lee Kum Kee soy sauce
1汤匙花雕酒
1 tbsp hua tiao wine
1汤匙李锦记蚝油
1 tbsp Lee Kum Keepremium oyster sauce
1茶匙糖
1 tsp sugar
1汤匙姜汁
1 tbsp ginger juice
烧至汤汁浓稠
cook till it starts to boil and thicken slightly
淋上汤汁
drizzle sauce over scallops
放上李锦记XO酱(依据个人喜好而定)
add seafood XO sauce on top(adjust to preference)
用葱花装饰
garnish with chopped spring onions
