You will need three eggs for one serving and five eggs for two.

No need to whip your eggs before,

and it is best to season your eggs right at the end of cooking.

If you season too early, the salt breaks down the eggs

Heat up your non-stick pan on low heat,

turn off the heat, add remaining butter and season with salt and pepper.

Serve your scrambled eggs over a lightly oiled

or buttered, toasted slice of sourdough bread,

French baguette, ciabatta, focaccia, flat bread or English muffins.

That is totally up to you.

Next, the French method, using water bath.

Although there is no caviar on this one,

but this method actually offers a silky caviar like texture.
首先用文火炖
First, bring water to a simmer,
把食用油融入大碗然后倒入没有搅打的鸡蛋
melt fat into a large bowl and pour in the unbeaten eggs
接下来戳这些鸡蛋 然后等几秒钟 不要搅打
and poke them and wait without stirring a few seconds
直到这些鸡蛋开始凝固
until the eggs begin to coagulate.
然后轻轻地搅动鸡蛋到变厚为止
Gently then stir eggs until it thickened,
接着加入剩下的冷黄油 同时加入盐和辣椒调味
then add remaining cold butter and season with salt and pepper.

Give a good stir and serve.

Remember that if you cook scrambled eggs

over a high heat or for too long,

they will yield hateful rubber texture.
