Rolled Omelette Tamagoyaki Recipe – Bruno Albouze – THE REAL DEAL

As much as I love eating eggs,

Tamagoyaki is a type of Janpanese rolled omelet

that you might have seen served on top of Sushi.

It is usually made with a rectangular suacepan,

But no worries,

you can use your regular, uh, nonstick skillet.

Indeed, you might have seen these highly skilled sushi chefs.

Mince chives and onions.

With the aid of mandolin fine julienne,

For two servings, I am going to crack five eggs.

Add salt, pepper, and whip them out until smooth.

Pass them through a sieve to remove the chalaza.

Next, heat up a 10 to 12 inch,

about 27cm diameter nonstick skillet on medium-low.

Throw in half table spoon of butter and a dash of oliver oil.

Carefully roll into a log shape,

and move the rolled omelet to the side where you started to roll

and pour the egg mixture to cover the bottom of the pan again

and add more vegetables.

when the new layer of eggs has set

and repeat with the last third of the eggs.

Don’ t worry if it is still wet,

your omelet will continue cooking.

and remember there is nothing worse than eating all well cooked eggs.

Remove from pan

and blaze the omelet on the bamboo mat and wrap it up.
把热乎乎的鸡蛋卷放在竹帘上卷紧
Let it stand for 3 minutes, slice and serve.
放置三分钟就可以切片食用了
