Welcome to Japan’s northern most city,
北海道的旭川市
here in Hokkaido, Asahikawa.
在跨国便车旅程中我停留了下来
I stopped here on my cross-country hitchhiking trip
是因为一个特别的原因 拉面
for one reason in particular, ramen.
旭川的拉面特别出名
And Asahikawa’s ramen is very famous
但我不确定什么让它
but I’m not sure what makes this place
与扎幌的拉面
different from Sapporo ramen,
或日本其它地方的拉面不同
or any of the other ramens around Japan.
福冈市波多港的拉面因豚骨汤而出名
Fukuoka Hakata ramen is famous for “Tonkotsu”,
那是一种浓香的猪骨汤
a thick pork bone broth.

Very filling, and very good.
附近的扎幌拉面因味噌面闻名
Sapporo ramen nearby is known for miso ramen,
有点轻淡的坚果味和甜味 浓郁但不沉重
slightly nutty and sweet, thick but not too heavy.

The miso is added to different soup stocks,

So where exactly is the Shoyu ramen paradise?

We’ll have to head to Hokkaido in Japan’s north,
旭川巿一探究竟
to the city of Asahikawa.
从扎幌开始 有三个小时的车程
It’s a three-hour drive from Sapporo,
经过大雪山国立公园
next to Daisetsuzan National Park,
这意味着这个城市有着国家最干净的水
meaning the city has some of the cleanest water in the country.

Asahikawa is easy to navigate with a perfect grid system.

So I get a map at the tourist office that

And I’m sure the taste hasn’t changed a bit.

Baikoken is the classic bowl of shoyu ramen.

There are no hidden bells and whistles with this bowl,

unless of course you order a topping like Ajitama,

the delicious half boiled egg that I can never pass up.

You can see that the shoyu ramen
比猪骨面和味噌面更清亮
is lighter than tonkatsu and miso,

Just the right amount of oil to load up that richness.

Baikoken uses wavy noodles

that collects more of the salty soy sauce broth.

It hasn’t changed 14 years.

I moved on to Aoba,
那儿离梅光轩只有一小点路程
which was just a minute away from Baikoken.
一个朋友向我大力推荐
It came highly recommended to me by a friend.
老板让我在他打烊时吃面来避过排长队
The owner let me eat during his break to avoid the lines.
菜单有所有种类的拉面 但是
They’ve all the kinds of ramen on the menu but
我们来这儿是专门享用这里的酱油拉面!
come on! We’ve come here for shouyu ramen exclusively.
青叶的面用直面条
Aoba uses straight noodles.
一片健康的叉烧猪排
A healthy piece of char siu pork steak.
海笞上的眨眼章鱼让人感觉很舒服
The winking octopus on the nutty seaweed is a nice touch.
酱油汤的味道均衡完美
The syouyu soup is perfectly balanced.
人们感觉得到
The atmosphere at Aoba is authentic,
青叶的氛围
that family feel of it all
家庭味道的真实 简单朴素
adds to the flavor which is, simple.
淋上生抽加上盐的鸡肉和猪肉
Chicken and pork based stock with soy sauce

light, salty, and also good.

By far one of the friendliest places

I’ve ever visited with a long history,
村山家族三代经营青叶 有着悠久的历史
the Murayama family has run Aoba for three generations.

Here’s the founder.

His son, the second-generation chef.
现在经营的是第三代 雄一
And now his son, Yuuichi,
就是今天在柜台后的那位
who was behind the counter today.
我在中国的北京
In China , I was in elementary school.
度过了我的小学时代
In Beijing.
笫二次世界大战之后
After World War 2,
我和我的祖父母回到了日本
I returned to Japan with my grandparents.
1947年 店铺开业了
This shop opened in 1947.
今年我们要庆祝它的七十周年
This year we celebrate the 70th year.
七十年啊!
70 years!
那是我儿子
That’s my son.
这家店的第三代传人
The third generation at this shop.
那 味道还和原来一样吗
So, the taste is the same?
和原来的味道一样
It’s the same.
这家店的好味道持续了数十年
The shop’s good taste is in the decades of consistency.
当你游览旭川时青叶可是你不能错过的地方
Aoba is one place you simply can’t miss when visiting Asahikawa.
但这不是拉面之旅的最后一站
But it’s not the last place on this tour to ramen.
离青叶不远是天金
So not far away from Aoba is Tenkin,
另一个旭川非常有名的地方
another really famous place in Asahikawa.
我还能再吃一碗
I can eat one more.

Tenkin is a five-minute walk from Aoba.

keeps the soup hot for a longer time.

It’s like insulation.

There’s a lot of other good stuff in there too.

And the taste,

divine.

But I couldn’t get over that broth.

It reminded me of Van Gogh’s masterpiece, the Starry Night.

A galaxy of flavors swirling on the canvas,

or bowl, if you’re at Tenkin.
