Hi, guys.
想要煮出完美的全熟鸡蛋
In order to make perfect hard boiled eggs,
你不需要把鸡蛋放置数周后再煮
you do not need to let them aged a couple of weeks pre your boiling.
虽然有人说 这样可以更好地剥壳
Some people say it makes them easier to peel.
哈哈哈哈
[laugh]Ha ha ha ha.
得了吧
Give me a break.
你怎么能
Would you dare to
用不新鲜的鸡蛋
make these beautiful deviled Eggs of mimosa
来制作这些精致美味的魔鬼蛋呢
using old ones?
即使你买的是今天刚到的散养鸡蛋
If you have purchased pasture-raised
或有机鸡蛋
or organic free-range eggs today
也不代表它们就是刚下的新鲜蛋
does not mean that they have just been laid.
一切信息得从包装上的日期得知
The date of the packaging will tell you what you need to know.
所以 要记得看日期喔
So, be aware of it.
但是 要知道的是 大多数鸡蛋在你买之前就已经放了至少一星期了
But you know, most of them are already a week old at least.
所以不要把它们再多放两个星期
So no need to get them aged for two more weeks
再拿来煮着吃
before making your hard boiled eggs.
如果有忘了及时吃
If you have some forgotten eggs
已经超过保质期一周的鸡蛋
that have passed a week after the expiration date,
我宁愿把它们拿来做烘焙
I would use them for baking rather
或者如果你讨厌你老板 就用这些鸡蛋砸他
or throw them at your boss if you don’t like him.
[笑]好了我们开始吧
[Laugh] Let’s get started.
首先 往中号锅里加一夸脱的冷水
First, pour one quart of cold water into a medium saucepan.
把鸡蛋放进去
Add your eggs.
倒入没过鸡蛋至少两英寸的冷水
And cover with at least two inches of cold water.
加两大勺白醋
Add two tablespoon of white vinegar
一大勺盐
and one tablespoon of salt.
加盐是为了让煮出的气泡变小
The salt, by the way reduces the size of the boiling bubbles,
避免鸡蛋在锅里撞来撞去
preventing eggs from bouncing around.
而白醋可以让蛋壳变软
And the white vinegar softens the egg shell.
随后开大火 把锅盖盖上
Bring to boil on high heat, then cover.
达到温度后关火 让中等大小的鸡蛋继续在余温中煮12分钟
Turn off the heat and let cook for 12 minutes for medium size eggs
大些的鸡蛋煮14分钟
or 14 minutes for extra large.
因为鸡蛋
Since eggs, by the way,
在华氏185度
coagulate at 185 degrees Fahrenheit,
也就是摄氏85度时就凝固了
85 degrees Celsius.
所以没有必要煮沸
There is no need for boiling.
这样你可以省下些开销了
Thank you, you will lower your bill.
把鸡蛋转移到冰水里
Transfer eggs in ice water
让它们冷却20分钟
and let them cool for 20 minutes.
剥蛋的时候
To peel your eggs,
轻轻敲击蛋壳的每一处使之破裂
crack them gently all over their surface,
从大的那头开始剥
Starting at the fat end
边转边轻轻敲打各个位置
ang gently rotating and tapping all around.
看 这个就剥得差不多了
Guys, I’ve done it.
我煮了两种蛋
I have cooked
一种是放了两星期的 一种是放了三天的
both two weeks old eggs and three days old.
这两者并没有太大区别
There is no difference between the two
只是那几个新鲜些的
except that the youngest eggs
蛋黄比较居中
have a well-centered yolks
而且口感更佳
and taste better.
为了把壳更好地剥下来 轻撵鸡蛋的各个位置让它裂开
To peel an egg, crack it gently all over their surface.
从大的那端开始
Starting at the fat end,
边转边轻轻敲着来剥
then gently rotating and tapping all around
最后放进刚才的冰水里清洗一下
and rinse them in the same ice water.
没必要在流水下剥
No need to peel them under a running water.
这又给你省下了一笔开销
You will lower your bill, again.
