Look at the shape of an egg.

If you’ve got a chance, one day,

if you have a leftover of dough, bread dough,
或者一块黏土
or piece of clay,

just try to duplicate the shape of an egg.

My dad asked me (to do) that, a long time ago.

When I was a little kid,

And he goes, “Try to duplicate an egg.”

And you can’t.

cooking eggs is tricky.

Two things before you start.
第一 用新鲜鸡蛋
First, get the freshest eggs.
新鲜鸡蛋有更紧实的蛋白、蛋黄
They have tighter white and yolks,
在你烹饪时 更容易成形
that help them retain their shape better as they cook.
第二 不要在水中放盐
Second, do not salt the water of (it).
这样会破坏蛋白
It will break down the white,
让蛋白散在锅里
spreading out in the pan.
这可不想你想要的
You just want the opposite.
所以以白醋代替盐放进水里吧
So add white vinegar instead.
现在好戏上演了
Now, the best trick you’ve ever seen.
把鸡蛋在热水中煨十分钟
Precook (the) egg in simmering water for ten seconds.
然后取出鸡蛋
Then remove the egg,
把鸡蛋磕开 蛋液倒入水中央
crack and drop the egg into the center of the whirlpool,
烹制大约三分钟
and cook for about three minutes.
水不要烧开
The water must not boil,
水温最好控制在185华氏度
but would rather be around 185 Fahrenheit,
85摄氏度
85 degrees Celsius,
这是煮鸡蛋的温度
which is the poaching temperature.
把鸡蛋从热水中捞出
Remove the egg from the hot water
再放入冰水中冷却
and transfer (it) to an ice bath to stop cooking.
这样部分鸡蛋在壳里就已经熟了
Partially precooking the egg in its shell
能使蛋白在去皮之前塑成鸡蛋的形状
allows the white to take the shape of the egg before shelling,
煨火部分就完成了
and finish simmering in water.
照看好你刚做好的蛋哦
Take care of your new born egg.
现在 煮过的鸡蛋进入了下一个阶段
Now, take your poached eggs to the next level.
用一撮盐打蛋
Beat the egg with a pinch of salt
然后先把鸡蛋裹层面粉
Then coat each poached egg with flour first.
然后放入鸡蛋混合物中
Then dig into the egg mixture
面包屑中
and the bread crumbs.
接着将炸锅调至中高火
Next, heat up your frying pan on medium-high heat.
化一点优质黄油
Melt a fair amount of good butter,
将裹了面粉的鸡蛋两面炸至金黄
and fry breaded eggs in both sides until golden brown.

And transfer them onto paper towels,

season with salt and pepper,

and serve immediately.

pair so beautifully with salads, of course

raw or cooked vegetables, hamburger, soup, garnishing,
烤面包 烤肉或意大利调味饭
toasted bread, bacon, risotto,
烤鸡胸肉 还有其它超多选择
roasted chicken breast and so many other options.
