Eggs Florentine, Benedict and Arnold
佛罗伦萨蛋 班尼迪克蛋和阿诺德蛋
are three classic eggs preparations,

using toasted English muffin, country bread or brioche,

Guaranteed to be oozing with a golden yolk tripping over the spinach,

Speaking of which, here is the recipe, so simple!

Combine flour, salt, and the cubed butter,

and rub in with your fingertips

until the mixture resembles fine breadcrumbs.

Add milk and knead the dough briefly until just combined.

Wrap it up and chill.

Meanwhile, grease your English muffin rings

with a chunk of butter.

Next, flatten the chilled pastry

until dough is about 3 millimeter thick.

Divide sheet into 6-inches diameter disks.

Flatten each disk of dough a bit more,

and shape the dough inside of each mold

by applying it to the whole surface of the mold

from bottom-up using your thumbs.

Fill them up with rice, beans, or pie weights

and bake for 20 minutes.

Remove weights and bake for additional 15 minutes.

Next, the poached eggs,

bring water and white vineger to boil, no salt,

and lower the heat and maintain a low simmer.

Carefully drop an egg into the center of the pot,

and let it cook for 30 seconds.

Then, slowly stir the water in one direction.

After 3 minutes, transfer eggs to an ice bath.

For the spinach, trim off stems,

and wash thoroughly until water is clear.

Cook swiftly for a minute in a hot pot

with a drizzling of olive oil.

Season with salt and pepper, and drain over paper towels.

For the Mornay sauce,

we’re going to start making a béchamel and make a roux.

Combining the melted butter and the flour,

cook for 1 minute, and let cool.

When the milk is boiling, mix in the roux.

Turn on the heat, and bring béchamel to boil,

whisking constantly for 2 minutes over medium high heat.

Turn off the heat and whisk in the egg yolk,

and add cheeses, and salt and pepper, and let cool.

This is all about taste!

So next I am going to garnish these little guys.

Spread some of the Mornay sauce on the bottom of each pie shell.

Add some spinach, a dot of Mornay, the poached egg,

and cover completely with the Mornay.

Top with parmesan, and bake for 8 minutes

at 400 hundred degrees Fahrenheit, 200 hundred degrees Celsius,
