Here are a couple of things to know in order to make a memorable Sunday morning breakfast.

Try to find the best and freshest eggs.

Get eggs right out of the chicken’s pods.

For instance, if your eggs are too old while poaching them, then the whites won’t coagulate properly.
你还需要准备上好的黄油
You also need good butter,
火腿或者培根来做班尼迪克蛋
ham or bacon
我喜还欢用奶油卷或者几片白面包
to make my eggs Benedict, I like to use brioche or slices of challah bread.
准备澄清的黄油
To make clarified butter,
黄油切块后放到微波炉加热 直至充分融化 大约六十秒
chopped butter and microwave for about 60s or until melted.
黄油凝固后 用勺子刮下黄油表层的薄膜
Once set scrape the film of the surface of the butter
倒出底部溢出的水
and allow the water to be escaped from the bottom.
倒置剩下的黄油 擦掉多余的凝脂
Filp over and wipe out the milk solid remaining
同时 向锅里加水
meanwhile bring water to a bowl
加入少许醋和盐
and add the vinegar and salt.
将鸡蛋分别放到四个碗里
Break the eggs into four separate cups,
迅速搅动醋水 再轻轻放入鸡蛋
swirl the vinegared water briskly and slide in an egg,
鸡蛋在盘旋的过程中 就会形成平滑的外观
it will curl around and set to a neat around shape.
煮约三分钟就好了
cook for about 3mins.

If you don’t feel comfortable
煮蛋 我还有另外一个绝妙的方法
poaching eggs, here is the ultimate answer.
在同样的沸水中 鸡蛋煮上个五分半钟
In the same boiling water, parboil eggs for 5mins and 30s.
煮好后将它们放入冷水 约五分钟
Transfer to a bowl of ice water to cool down for 5mins.
用汤匙敲裂蛋壳
Crack the shell with a spoon
再泡上几分钟
and leave them to rest a few minutes more in the water.
老实说
Let’s be honest,
当你不能完整地剥一颗鸡蛋时是不是特烦?
don’t you hate eggs when you can’t peel them?

hahaha.

Now, you have no excuse.

In the meantime, fry bacon until crispy on low heat.
准备好奶油卷或者松饼
Get you brioches or muffins ready.
用吸油纸吸干培根的油
Drying bacon on paper towels.
在锅中倒入无水黄油 开中火将吐司 奶油卷煎个几分钟
Add some clarified butter and toast, the brioch, a couple of minutes on medium heat.
制作荷兰酱汁
To make Hollandaise Sauce,
给三个半夸脱的平底锅满上一半的水
Fill half of 3 and a half quart saucepan with water.
把水微微加热
Bring water to a gentle simmer,
这时 可以开始准备蛋黄和柠檬汁了
meanwhile get your egg yolks and lemon juice ready.
然后将蛋黄 柠檬汁和水混合在一起
Now, combine the egg yolks, water and lemon juice,
把碗置于煮着热水的平底锅上
place the bowl over the saucepan of simmering water,
不断地充分搅拌 约三分钟 直到蛋黄颜色变浅 变得浓稠
and whisk constantly and vigorously until the yolks are thickening and light for about 3 minutes.
慢慢把碗拿起来 不断搅拌的同时加入几滴黄油
Then remove from the heat, slowly drips of the butter into the eggs while whisking constantly.
适量加点调味料 大功告成
Add seasoning, done.
重新加热刚才煮好的鸡蛋
The time has come to reheat your eggs.
放上煎好吐司和培根
Grab your warm toast and bacon.
