This is cactus, or nopales, as we call it in Mexico. They are everywhere.

Is this a special kind of cactus?

This is opuntia cactus, this is, you know prickly pears?

They grow on the edges of this.

And this has very significant blood sugar regulating properties.

So if people have elevated blood sugar, you know, pre-diabetic, that kind of thing.

This is a peeled clean cactus.

And then it’s cut in squares like this.

Then it’s drizzled with some olive oil, cilantro, tomato, and a little bit touch of vinegar.

It’s really delicious. It’s, you know, like a salad.
