Deviled angel, or dressed eggs,

are just hard-boiled eggs

shelled, cut in half, and filled with a mayonnaise mixture,

a classic and egg-cellent hors d’œuvre,

adorable, crowd-pleasing snack.

You will need 6 hard-boiled eggs
准备六个完全煮熟的鸡蛋
cut in half, which makes twelve appetizer servings.

Homemade mayonnaise has a silkiness, an elegance

that you won’t find in any commercial preparation.

Attempting making your own mayonnaise could be intimidating,

but no worries,

you just have to make sure that your ingredients are at room temeprature.

For a cup of mayonnaise,

you will need an egg yolk from pasture-raised, or organic free-range eggs,

a teaspoon of Dijon mustard,

pinch of salt, pepper,

and a dash of red vinegar or lemon juice at the end.

Whisk together yolk, mustard, salt and pepper.

Pour in vegetable oil in a very slow, thin stream,

Add a dash of red vinegar or lemon juice,

Next, cut eggs in half, and pass egg yolks through a sieve

to get this gorgeous reminiscent of the puff,

And mix together the mayonnaise with

1 teaspoon of Dijon mustard, and 2/3 of the yolks.

Now it looks like a pastry frangipane filling.

And I’m gonna add some minced chives.

Readjust seasoning with salt and pepper.

Of course, I’m not gonna say otherwise.

Evenly pipe out the yolk mixture into the egg whites.

You should have just enough filling.

Then, sprinkle some piment d’Espelette,

cayenne or paprika, chives,

and the most important thing,

the remaining yolks Mimosa.

Now you can serve these gorgeous little things

with seasoned butter lettuce, and baby arugula.
